The mini cupcakes went down well for morning tea at our mother’s but you definitely need two of them so I’m not too sure the mini quest works. But I won’t give up. I must buy a mini cake tin for next week and remember to make half the quantity of the recipe I choose.
Meanwhile, today is the serious day – morning teas for the week. I found this granola bar recipe at the What’s on my Plate blog some time ago and kept it in a folder. It was easy to prepare but it is a little crumbly and I will let you know how it tastes after morning tea tomorrow since I haven’t tried one yet.

Recipe: Honey Cranberry Granola Bars
Ingredients 
- 2 cups oatmeal
- 1 cup slice almonds
- 1 cup shredded coconut
- ½ cup wheatgerm
- 3 tbsp coconut oil
- 2/3 cup of honey
- ¼ cup brown sugar
- 1 ½ tsp pure vanilla essence
- ¼ tsp salt
- ½ cup pitted dates – chopped
- ½ cup dried apricots – chopped
- ½ cup dried cranberries
Method
- Preheat oven to 350°F/200°C.
- Butter an 8 inch x 12 inch baking dish and line with baking paper.
- Combine the oatmeal, almonds, wheat germ, and coconut on an oven tray and bake for 10-12 minutes, stirring occasionally, until lightly browned. Make sure it doesn’t burn.
- Transfer to a mixing bowl.
- Lower oven to 300°F/160°C.
- Combine the coconut oil, honey, sugar, salt and vanilla in a saucepan and bring to the boil over medium heat.
- Cook and stir for a moment and pour over the dry ingredients.
- Add the dried fruit and stir.
- Put the mixture into the prepared pan. Press in place.
- Bake for 20-30 minutes until golden brown.
- Cool thoroughly and cut into bars.

Nice recipe. I really like oatmeal, but prefer it in baked goods rather than cereal. So this is right up my alley. Good stuff – thanks.
I haven’t tried one of these yet but will do so soon and give my verdict in the post. My husband said they are not his favourites among the ones I have made so far.

I love how you styled these. They look delicious. And I love how they have three kinds of dried fruit in them. I think these would be perfect for school lunch boxes.
Thanks, Charlie. I am about to have one for afternoon tea then I will post my verdict. Some of my other granola bars are truly delicious but this one had coconut oil as the binder instead of mashed banana or applesauce and I’m not so sure about it.

Wonderful bars – all the delicious and healthy ingredients! And the photo is gorgeous! I only recently started cooking with coconut oil, and so far I loved it in everything. So I am sure it will be delicious as a binder in granola bars. I can’t believe you have not tasted them immediately – I would certainly sample a bar (or two) 🙂

Actually I have just had one and they are certainly crisper than some of the others I have made but I enjoyed it. The flavours were all there. Yesterday I finished photographing them not long before dinner and I didn’t want to spoil my appetite by eating one. And this morning I had one of my mini chocolate marshmallow cupcakes for morning tea. I don’t usually wait this long before sampling my baking. LOL.

Kim, I have even healthier ones which have no added sugar or fats and they are just as delicious. I would never have believed there was such a variety among granola bars until I started making them.
