A couple of weeks ago, I was standing in line at the supermarket checkout, which is a rare occurrence since Adriano and Dario do all the shopping. Anyway, the woman in front was stocking up for a natural disaster and I had time to kill so I did exactly what the supermarket owners hope I will do – peruse the tempting array of sweets and magazines within arm’s reach. I started flicking through a cooking magazine, wondering why I had broken my own golden rule of never going food shopping on an empty stomach, and succumbed to the excruciatingly gorgeous photographs of deliciously arranged food. It went in the shopping trolley, adding $13 to my bill. It was called New Idea Masterclass and tonight’s recipe is one of its 185 recipes. This is a simple, tasty meal which took under 30 minutes but it still couldn’t beat Jamie’s meals. I am going to have to return to him again soon.
- 50g/2 tbsp butter
- 1 leek, thinly sliced – green part only
- 200g/7 oz sliced smoked salmon
- 2 tbsp chopped herbs (of your choice – I used parsley)
- ½ cup cream or crème fraiche
- Salt & pepper
- 6 eggs
- ¼ cup Parmesan – grated
- Turn on oven to 180°C/350°F.
- Grease six ovenproof dishes (2/3 cup capacity) with half the butter.
- Place dishes on an oven tray.
- Heat remaining butter in a frying pan. Add leek. Cook over medium heat until soft.
- Remove from heat. Stir in salmon, herbs and cream. Season.
- Divide leek mixture among prepared dishes.
- Crack an egg into each dish.
- Sprinkle with Parmesan.
- Place in the heated oven for about 18 minutes or until egg white is set and yolks are still soft.
- Serve with extra herbs as a garnish.

Looks like a great weeknight meal option, and that cheesy Parmesan topping looks just perfect!

It was a very easy meal and yet felt special because of the individual dishes.
