Do you sometimes crave a little something sweet? You know you are better off without eating sweet treats but when the cravings become too strong, it is better to have something low Fodmap to sink one’s teeth into. You can make these quickly from ingredients you probably have in the fridge. Any low Fodmap nuts would work and you can certainly play around with the flavours. So don’t reach for your husband’s chocolate biscuits. Whip a few of these chocolate cranberry truffles up instead.
Chocolate Cranberry Truffles - low Fodmap

Ingredients
- 1 cup walnuts
- 40 gms/1.4oz of butter
- 2 tbsp cocoa
- ¼ tsp peppermint essence
- 2 tbsp icing sugar
- ¼ cup fine oats
- 1 tsp cinnamon
- A pinch of salt
- 2 tbsp dried cranberries
- Desiccated coconut
Method
- Place everything except the coconut and cranberries in a blender and blend until smooth.
- Add the cranberries and pulse a few times to distribute.
- Take teaspoonfuls of the mixture and drop into the coconut. Cover it in coconut and then roll it into a ball between the palms of your hand.
- Repeat with the rest of the mixture.
- Refrigerate to firm up.

Chocolate and peppermint are a great flavour combination. These truffles are very flexible – as long as the dry to wet mix is right, you can really create them however you want.

These look lovely, Suzanne. My mother used to make these at Christmas time (something similar called rum balls) so they weren’t as healthy but they looked just as pretty and it was always wonderful when these appeared at the end of a meal xx

I remember rum balls as well and they tasted exquisite since they were such a special treat. They sure were not as healthy as these ones though.
