Adriano and I don’t see eye to eye on anchovies and sundried tomatoes. I don’t want anchovies in my pasta or on my pizzas and he doesn’t want sundried tomatoes. But tonight he ate it in this dish and only grumbled a little. Arugula is my favourite green – I love its peppery taste and I would add it to almost anything. The pizza I always order in Italy is tomato, mozzarella and arugula. Nothing else. As far as I am concerned, less is more with pizzas and pastas.

Creamy Fusilli Salad with Sundried Tomatoes, Peas & Arugula
juice of 1/2 a lemon
Zest of 1 lemon
125g sour cream
3 tbsp milk
Tabasco sauce
Salt and black pepper
Fusilli pasta
Arugula
Sundried tomatoes, sliced
Frozen peas
Shaved parmesan
Method:
Boil the pasta as usual but towards the end, add the peas to cook them through.
Mix together the first six ingredients to create the sauce.
Drain pasta and add the sauce and all but a few sundried tomatoes.
Dress the plates with the arugula and place the pasta in the middle and decorate with the rest of the sundried tomatoes and sprinkle with the parmesan.

This dish is very easy to prepare, which is very tastier, this dish with pasta is very much healthier.

This salad looks amazing!!! My hubby won’t eat anchovies or sundried tomatoes, but luckily I love both…and would be happy to make this yummy dish for me alone 🙂

I tend to avoid recipes that include ingredients one of the others doesn’t like but when they are both away, the mice will play …..
