This satisfying low Fodmap breakfast dish contains all the food groups, which will keep your digestive system happy and symptom-free. It’s also quite rich, so be sure to stick to a single stack. If you have a low tolerance to fat or have had your gall bladder out, this may not be suitable even though it is low Fodmap. If you make the potato patties thicker, you can create a hash brown, which you could have separately perhaps with an egg and a low carbohydrate vegetable.

- 17.6oz/500gms potatoes
- Salt and pepper
- 1-2 tbsp olive oil
- 4 cups of spinach
- 3.5oz/100gms smoked salmon
- 1 egg yolk
- ½ tbsp lemon juice
- ¼ cup salted butter
- Peel and grate the potatoes.
- Squeeze out all the liquid – the drier the better.
- Mix in a little salt and pepper.
- Heat the oil and place 4 large dollops of the potato mixture in the pan and flatten to form patties.
- Fry on both sides until brown.
- Remove and place on paper towels to drain as much of the oil as possible.
- Place a few spoonfuls of water in a saucepan and add the washed and chopped up spinach.
- Heat until the spinach is just wilted.
- Pile on top of the potato patties.
- Layer over slices of the salmon.
- Place the egg yolk and lemon juice in a small food processor and process to mix together.
- Melt the butter.
- While the machine is still going, drizzle in the melted butter until it is all incorporated.
- Check seasoning.
- Spoon over each patty.
