Every now and then Adriano asks for hamburgers to fill him up, especially after a couple of hard mountain bike races in a row. I make what could be considered a healthy version.
This recipe is not low Fodmap.
Hamburgers with a twist

Ingredients
- Mince rolled and flattened into patties
- Sliced avocado
- Sliced tomatoes
- Salad leaves
- Chilli sauce mixed with yoghurt
- Hummus
- Hamburger buns
Method
- I toast the bottom of the buns and spread hummus on them while the patties are cooking in a pan.
- I then add the avocado and tomatoes.
- When the meat is ready, I toast the top of the buns and assemble the rest of the hamburgers. First the patties then the sauce and lastly the salad leaves and the toasted bun tops to finish off.
I had left over filling from yesterday’s quesadillas so I added a couple of spoonfuls of that to each burger tonight as well. That accounts for how high they are in the photo. Tricky to eat when they are that high so keep lots of paper napkins or paper towels at hand.

I tried making your hamburger buns. Dough was so loose that I kept adding more and more flour. I finally threw it out. I followed recipe to the letter!

Aha! That explains it. It’s just coincidence that your comment is on a post with a normal hamburger.
These buns always work for me and the tapioca flour gums up and creates a strong dough. I know that the quality of tapioca flours can vary considerably. It needs to be one that will gum up. I get my flours from an Indian shop where they have the real deal. Perhaps try finding the flour in an Asian shop so you know you have what works.

Thanks! I used Bob’s Red Mill Tapioca Flour. I’ll try again with the Asian brand. Do you have any recipes for GF sandwich bread without gums or additives?

No, I don’t but just follow the instructions on any other bread recipe, in a general way.
The breadmakers that we have in New Zealand are different to the ones you will have where you are from. Have a look on Amazon and see how many stars they have and read a few of the reviews. Cost will also have to be factored in, of course.
