When my son was small, my mother used to make him banana ice cream with nothing but bananas by pushing frozen bananas through a meat mincer. It came out as a wonderful tasting ice cream that fooled everyone. No one could guess that it was nothing but bananas. Anyway, I wondered if I could replicate it without a mincer. Well, actually, the answer is no. So I have made a mousse instead.
I wanted to give the bananas a little more flavour so added dried cranberries and chopped them into the frozen bananas with a blender. Then I gave the mixture a little texture as well as extra flavour by adding coconut and flaked almonds. By using the frozen bananas, the mixture is very cold which resembles a very soft ice cream.
This is a simple, tasty dessert that you could easily make anytime as long as you have some bananas in the freezer, and you could vary the flavours according to what you have in the larder. I had thought of adding peanut butter but Dario had finished it all.
This recipe should be divided into two so that it doesn’t become high Fodmap.
- 2 frozen peeled bananas
- 2 tbsp dried cranberries
- 2 tbsp coconut
- 2 tbsp almond flakes
- Place the broken up bananas and cranberries in a blender and blend until smooth.
- Spoon out into a bowl and add the other ingredients.
- Mix well and place into 2 serving bowls.
- Eat straightaway or refrigerate.

I’ve heard of that kind of ice cream. I too have tried to make it but what I do is freeze the bananas then add them to my Magic Bullet. And while this works well, it’s more of a smoothie than an ice cream. What a healthy mousse! xx

I think my blender probably did what your Magic Bullet does but it really didn’t resemble what Mum used to make. I think the blender heats it too much and so melts it. The mincer just pushes it through still frozen but in a different shape and slightly softened.

You got me at simple and tasty 😀

That’s the perfect combination, isn’t it!

A friend of mine makes this often but I’ve never tried it. I think I must after looking at your photos.
Suzanne Perazzini says
I wonder if she has a mincer and manages to make the real deal.

How easy is this and it sounds terrific. 🙂
Suzanne Perazzini says
Easy is good though sometimes I do like the challenge of a technically complex dish. It depends how much time I have.

Just found this! I must try it since I find I can’t eat bananas straight. They must be part of a recipe. Should only unripened bananas be frozen beforehand or can I freeze the ripe bananas I already have? Looking forward to making this!
Suzanne Perazzini says
The bananas should not be ripe because they are high Fodmap. Also, this is pretty much the same as having them straight, so I would avoid this recipe, Rachel.
