Low Fodmap Chicken Cacciatore

Ingredients
  • 4 chicken legs & thighs
  • 2 spring onions - green part only
  • ½ cup tomato paste
  • ¾ cup white wine
  • ¾ cup chicken broth
  • ½ tsp oregano
  • ½ tsp basil
  • 1 bayleaf
  • 2 tomatoes
  • 1 large green bell pepper
Method
  1. Brown chicken in a little oil.
  2. Add the chopped spring onions. and cook a little.
  3. Combine everything but the bell pepper and tomatoes.
  4. Pour over the chicken.
  5. Cover and simmer for 35 minutes.
  6. Add the vegetables and cook covered for another 20 minutes.
