Low Fodmap Chicken Cacciatore

Serves: Serves 4
- 4 chicken legs & thighs
- 2 spring onions - green part only
- ½ cup tomato paste
- ¾ cup white wine
- ¾ cup chicken broth
- ½ tsp oregano
- ½ tsp basil
- 1 bayleaf
- 2 tomatoes
- 1 large green bell pepper
- Brown chicken in a little oil.
- Add the chopped spring onions. and cook a little.
- Combine everything but the bell pepper and tomatoes.
- Pour over the chicken.
- Cover and simmer for 35 minutes.
- Add the vegetables and cook covered for another 20 minutes.
