Mixed Vegetables - Low Fodmap

Ingredients
  • 3 potatoes
  • 250 gms/8.8 oz green beans
  • 3 tbsp butter
  • 1 tsp garlic-infused oil
  • 1 tbsp oil
  • Salt & pepper
Method
  1. Peel the potatoes, cut them into small cubes and boil for 3 minutes.
  2. Top and tail the beans and cut into 3.
  3. Boil for 8 minutes.
  4. Meanwhile, drain the potatoes and fry in the butter and 2 oils until brown.
  5. About 3 minutes before the potatoes have finished cooking, toss in the beans and finish the cooking.
  6. Season to taste.
