Spinach and Mince Pasticcio - Low Fodmap

Ingredients
  • 600gms/21oz frozen spinach
  • 600gms/21oz mince meat
  • 1 tsp garlic-infused oil
  • 1 tbsp cooking oil
  • ½ cup white wine
  • 1 can (420gms/15oz) of peeled tomatoes
  • Mature cheese
  • Salt & pepper
For the white sauce
  • 1 tbsp white rice flour
  • 1 tbsp butter
  • Lactose-free milk
  • Salt & pepper
Method
  1. Heat the oven.
  2. Place the oils in a frying pan and heat.
  3. Add the mince and brown it.
  4. Add the wine and burn off the alcohol.
  5. Add the tomatoes and season.
  6. Cook for 5 minutes.
  7. Cook the spinach just a little.
  8. Squeeze all the water out.
For the white sauce
  1. Melt the butter.
  2. Add the flour and stir until mixed in and it forms a ball of dough.
  3. Add milk slowly, mixing in between to make sure it gets well mixed in before adding another lot. Stop adding when it gets to the consistency of thick cream.
  4. Add about ¾ cup grated cheese and heat to melt.
  5. Season to taste.
To assemble
  1. Oil a baking dish.
  2. Place half the spinach on the bottom.
  3. Cover with all the meat mixture.
  4. Place slices of cheese on top.
  5. Add the rest of the spinach.
  6. Pour the white sauce over the top.
  7. Place in the oven until the top is browned.
