Savoury Pancake Pinwheels - low Fodmap & Gluten-free

Ingredients
For the pancakes
  • 1 cup gluten-free flour
  • 1 cup water
  • 1 egg
For the filling
  • Basil chopped up
  • Grated rind of one lemon
  • 3 small chillies, chopped finely
  • 3 zucchini
  • 1 red bell pepper
  • 6 slices of cooked bacon
  • 1 cup of grated cheese
  • ½ cup grated Parmesan
To assemble
  • Grated Parmesan
Method
  1. Mix the pancake ingredients together and cook 6 thin pancakes in a frying pan.
  2. Spread out a tea towel and place 3 of the pancakes overlappiing on it.
  3. Place the other 3 underneath overlapping as well. (all 6 pancakes are overlapping).
  4. Scatter over the grated lemon, basil and chillies.
  5. Cut up the bacon and place on top.
  6. Grill the bell pepper and zucchini until soft. Remove the skin of the bell pepper.
  7. Chop up both of them and scatter over the bacon.
  8. Distribute the grated cheese on top.
  9. Using the tea towel as a guide, roll up the pancakes quite tightly.
  10. Oil a baking dish.
  11. With a sharp knife, slice the roll into 3-4cm wide rounds and place in the baking dish.
  12. Scatter the Parmesan over the top and bake until it is hot and the cheese is melted.
