Savoury Pancake Pinwheels - low Fodmap & Gluten-free

Serves: 4
- 1 cup gluten-free flour
- 1 cup water
- 1 egg
- Basil chopped up
- Grated rind of one lemon
- 3 small chillies, chopped finely
- 3 zucchini
- 1 red bell pepper
- 6 slices of cooked bacon
- 1 cup of grated cheese
- ½ cup grated Parmesan
- Mix the pancake ingredients together and cook 6 thin pancakes in a frying pan.
- Spread out a tea towel and place 3 of the pancakes overlappiing on it.
- Place the other 3 underneath overlapping as well. (all 6 pancakes are overlapping).
- Scatter over the grated lemon, basil and chillies.
- Cut up the bacon and place on top.
- Grill the bell pepper and zucchini until soft. Remove the skin of the bell pepper.
- Chop up both of them and scatter over the bacon.
- Distribute the grated cheese on top.
- Using the tea towel as a guide, roll up the pancakes quite tightly.
- Oil a baking dish.
- With a sharp knife, slice the roll into 3-4cm wide rounds and place in the baking dish.
- Scatter the Parmesan over the top and bake until it is hot and the cheese is melted.
