Chocolate Cranberry Truffles - low Fodmap

Ingredients
  • 1 cup walnuts
  • 40 gms/1.4oz of butter
  • 2 tbsp cocoa
  • ¼ tsp peppermint essence
  • 2 tbsp icing sugar
  • ¼ cup fine oats
  • 1 tsp cinnamon
  • A pinch of salt
  • 2 tbsp dried cranberries
  • Desiccated coconut
Method
  1. Place everything except the coconut and cranberries in a blender and blend until smooth.
  2. Add the cranberries and pulse a few times to distribute.
  3. Take teaspoonfuls of the mixture and drop into the coconut. Cover it in coconut and then roll it into a ball between the palms of your hand.
  4. Repeat with the rest of the mixture.
  5. Refrigerate to firm up.
