Chocolate Cranberry Truffles - low Fodmap

- 1 cup walnuts
- 40 gms/1.4oz of butter
- 2 tbsp cocoa
- ¼ tsp peppermint essence
- 2 tbsp icing sugar
- ¼ cup fine oats
- 1 tsp cinnamon
- A pinch of salt
- 2 tbsp dried cranberries
- Desiccated coconut
- Place everything except the coconut and cranberries in a blender and blend until smooth.
- Add the cranberries and pulse a few times to distribute.
- Take teaspoonfuls of the mixture and drop into the coconut. Cover it in coconut and then roll it into a ball between the palms of your hand.
- Repeat with the rest of the mixture.
- Refrigerate to firm up.
