Spicy Potato Pie - Low Fodmap and Gluten-free

- 4 large potatoes
- 3 spring onions (green part only), sliced up
- 1 red chilli, finely chopped
- 2 tsp garlic-infused oil
- 1 tbsp cooking oil
- 1 red pepper, chopped finely
- 6 rashers of bacon
- 1 bag of baby spinach leaves, chopped into fine strips
- 4 eggs
- ⅓ cup rice flour and tapioca flour mixed
- Salt and pepper
- Heat oven to 180°C/350°F.
- Heat the two oils and cook the chilli and spring onions until soft.
- Add the bacon and cook, then chop into hunks.
- Peel and grate the potatoes. Squeeze out all excess liquid.
- Mix all ingredients together.
- Oil a tart pan and tip the mixture in and flatten the top.
- Bake in the oven for about 30 minutes.
