Spicy Cajun Chicken

Serves: 4
- Can of corn kernels
- Bunch of coriander (chopped roughly)
- 1 red chilli (chopped finely)
- 2 spring onions (green part only, chopped up)
- 3 ripe tomatoes ( cut up into small pieces)
- 1 lemon
- 1 tbsp olive oil
- Salt and pepper
- 4 chicken breasts
- 1 tbsp Cajun seasoning (see below for the recipe)
- 1 tbsp polenta
- Cooking oil
- 3 rashers bacon
- 50 gms feta
- 2 tsp cumin
- 2 tsp coriander
- 2 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp oregano
- Place the first 5 ingredients in a bowl.
- Squeeze the lemon and add the juice and the oil with a little salt and pepper to taste.
- Mix it all together.
- Mix the Cajun seasoning and polenta together and coat the chicken in it.
- Cover with greaseproof paper and bash the chicken with a rolling pin to flatten it out.
- Place the chicken in a pan with the oil, turning after 3-4 minutes until golden and cooked through.
- Cook the bacon in a pan until crisp.
- Slice up and sprinkle over the cooked chicken with the feta crumbled up.
- Serve with mashed sweet potatoes.
- Mix all the ingredients together.
