Simple Chicken and Vegetable Stir-Fry

Serves: 4 servings
- 1tbsp oil
- 1 tsp garlic oil
- 1 tsp cumin powder
- 2 tsp cumin seeds
- 1 tsp ginger powder or fresh
- 1 tsp coriander powder
- 1 tsp turmeric
- 1 spring onion (green part only), sliced
- 500 gms/17oz chicken breast, diced
- 2 cups of broccoli florets
- 1 cup sliced zucchini
- ½ tbsp fish sauce
- 3 tbsp soy sauce
- ½ a cup of fresh cilantro/coriander
- Heat the 2 oils in a wok.
- Add the spring onion and spices and cook for a minute.
- Add the chicken and cook through.
- Remove from the wok and keep to one side.
- Add the broccoli and zucchini and cook until tender but still crisp.
- Add the chicken back in and reheat.
- Add the 2 sauces and stir to mix well.
- Remove from the heat and add the cilantro/coriander.
- Serve hot with boiled rice.
