Simple Chicken and Vegetable Stir-Fry

Ingredients
  • 1tbsp oil
  • 1 tsp garlic oil
  • 1 tsp cumin powder
  • 2 tsp cumin seeds
  • 1 tsp ginger powder or fresh
  • 1 tsp coriander powder
  • 1 tsp turmeric
  • 1 spring onion (green part only), sliced
  • 500 gms/17oz chicken breast, diced
  • 2 cups of broccoli florets
  • 1 cup sliced zucchini
  • ½ tbsp fish sauce
  • 3 tbsp soy sauce
  • ½ a cup of fresh cilantro/coriander
Method
  1. Heat the 2 oils in a wok.
  2. Add the spring onion and spices and cook for a minute.
  3. Add the chicken and cook through.
  4. Remove from the wok and keep to one side.
  5. Add the broccoli and zucchini and cook until tender but still crisp.
  6. Add the chicken back in and reheat.
  7. Add the 2 sauces and stir to mix well.
  8. Remove from the heat and add the cilantro/coriander.
  9. Serve hot with boiled rice.
Notes
Instead of the different spices, you could use a low Fodmap spice mix like one of the ones HERE.
