Lemon Curd Cupcakes

Ingredients
  • 250 grams butter, softened
  • 2 cups sugar
  • 6 eggs
  • 2 tsp lemon rind
  • 250 grams sour cream
  • 2 cups flour
  • 2 tsp baking powder
  • 1 cup lemon curd
Method
  1. Turn on the oven to 350°F/180°C.
  2. Cream the butter and sugar together until light and fluffy, add eggs, lemon rind and sour cream and mix until well combined.
  3. Fold in the flour and the baking powder until just combined.
  4. Fill the cupcake holders ½ full of the cake mixture.
  5. Bake in the oven for approximately 20 minutes.
  6. Cool the cupcakes.
  7. With a teaspoon, scoop out a small amount of the cupcake.
  8. Ice with your favourite icing.
