Thai Chicken Burgers

Ingredients
  • 1 kg. chicken breast, diced
  • 1 lemongrass, chopped
  • 100g breadcrumbs
  • 1 cup self-raising flour
  • 2 spring onions, chopped
  • 1 tbsp fish sauce
  • 1 cup cilantro, chopped
  • 1 egg, beaten
  • The zest of one lime
  • The juice of one lime
  • 1 chilli, seeded and chopped
  • Salt & pepper
Method
  1. Mix all ingredients and form 8 patties.
  2. Cover and place in the fridge for half an hour to firm up.
  3. Fry two minutes per side in a frying pan.
  4. Place them in a baking dish and bake 10 minutes at 180°C/350°F.
