Thai Chicken Burgers

- 1 kg. chicken breast, diced
- 1 lemongrass, chopped
- 100g breadcrumbs
- 1 cup self-raising flour
- 2 spring onions, chopped
- 1 tbsp fish sauce
- 1 cup cilantro, chopped
- 1 egg, beaten
- The zest of one lime
- The juice of one lime
- 1 chilli, seeded and chopped
- Salt & pepper
- Mix all ingredients and form 8 patties.
- Cover and place in the fridge for half an hour to firm up.
- Fry two minutes per side in a frying pan.
- Place them in a baking dish and bake 10 minutes at 180°C/350°F.
