Lemon Muffins

Serves: 12 muffins

- 125g butter
- ⅓ cup cane sugar
- 2 eggs
- zest and lemon juice of 1 lemon
- 1 cup brown rice flour
- ¼ cup potato starch
- 2 tsp baking powder
- ½ cup Greek yoghurt
- Preheat oven to 180°C/350°F.
- Butter a muffin tin for 12 muffins.
- Cream butter and sugar together until fluffy.
- Add the eggs one at a time and mix well.
- Add the zest and lemon juice and mix.
- Sieve together the flour and baking powder into the wet ingredients and mix together.
- Add the yoghurt and mix.
- Spoon into the muffin tins and bake for 25 minutes until cooked.
- Leave to cool for 10 minutes before removing to a cooling rack.
- These will keep for 2-3 days or you could freeze them individually for when you need them.
