Basil and Tomato Tart

Ingredients

  • 5 cups grated mozzarella cheese
  • 4 medium tomatoes
  • 1 cup basil leaves
  • 1 tsp garlic-infused oil
  • ½ cup mayonnaise. Find my recipe here.
  • ¼ cup Parmesan cheese
  • Black pepper
Method
  1. Preheat the oven to 180/350°F.
  2. Prepare the pie crust according to the instructions in the recipe.
  3. Press it into a flan or tart tin.
  4. Place a sheet of baking paper in the base and fill with rice or baking beans.
  5. Bake for 10 minutes, remove the beans and bake another 10 minutes.
  6. Sprinkle ½ cup of mozzarella cheese on the hot base.
  7. Cut the tomatoes into wedges and arrange on the top of the cheese.
  8. Place the basil in a food processor and chop finely.
  9. Add the oil and whiz again.
  10. Sprinkle this mixture over the tomatoes.
  11. In a bowl, mix together the remaining cheese, the mayonnaise, the Parmesan and the pepper.
  12. Spoon this mixture evenly over the basil.
  13. Bake in the oven for 20-30 minutes. Watch the top doesn't brown too much.
  14. Serve hot.
