I thought it was about time I gave you another recipe. I bought some fresh fish and used what else I had in the fridge. I always have eggs, chillies, coriander and spinach. I guess they are my favorite ingredients for my made-up recipes. This is a quick and easy recipe that you can whip up in 15 minutes or less. Enjoy!
Fish Omelette - Low Fodmap & Gluten-Free

Serves: 2-3
Ingredients
- 6 eggs
- 6 tbsp lactose-free milk
- 2 fillets of white fish
- 1 red chilli (optional) - de-seeded and chopped finely
- 2 spring onions - green part chopped
- Light olive oil
- 2 handfuls of baby spinach
- Salt and pepper
- Coriander (cilantro), chopped roughly
- Parmesan cheese
Method
- Put on the grill in the oven.
- Heat the oil in a pan and add the spring onion and chilli.
- Cook 1 minute.
- Chop up the fish and add to the pan.
- Mix eggs, milk, salt and pepper and beat together.
- Add the spinach to the eggs.
- When the fish is almost cooked through, add the eggs to the pan.
- Cook until the base is set.
- Sprinkle with the coriander (cilantro), grate some Parmesan cheese over the omelette and place in the oven to firm up the top.
- Remove and serve hot.

What kind of fish do u use?

I used terakihi but you may have different fish. Just use a fairly firm fish so it doesn’t break apart too much.

I have both I BS and GERD. Strawberries, lemon and other citrus are not permitted. Are you taking IBS into consideration with these recipes or just acid reflux, which hasn’t advanced to far. Recipes look great.

This is a low Fodmap recipe for IBS. If you have GERD, omit the chilli and spring onions greens. Strawberries are fine for reflux.
