As usual, on Sunday I bake the healthy morning tea for the week. I decided to combine some of my favourite granola bar ingredients and make them into cookies rather than bars. Pure semantics, I know, but a girl needs a change once in a while. Adriano and Dario have come to expect the baking containers to be full. Last week we ran out before the end of the week so this time I made quite a few cookies but several have already been eaten so maybe I should have tripled the recipe. These took all of ten minutes to throw together and they looked cooked after about ten minutes but, as I have said, my oven is whacky and they could take longer in yours.
This recipe is not low Fodmap.
- 1 cup rolled oats
- ½ cup crunchy peanut butter
- 1 cup apple sauce
- ½ cup chocolate drops
- ¾ dried cranberries
- 1½ tsp vanilla essence
- Pinch of salt
- 1 tbsp honey
- Heat the oven to 200°C/350°F.
- Whisk together the wet ingredients.
- Add the other ingredients and mix well.
- Drop spoonfuls onto baking paper on an oven tray.
- Bake 10--15 minutes.
- Remove from the oven and cool on the tray so they firm up.

You know, these words should be required in every baking recipe. I know so many people who think cooking by time is gospel, and of course you cook until it’s done. Which means you have to test. Anyway, didn’t mean to rant! This looks like a really nice recipe. And yes it is semantics, but granola cookies does sound much better than granola bars. Thoroughly fun read – thanks.

It’s that word cookies, isn’t it? Visions of melt-in-your-mouth decadence. I had such a great oven in the last house. I feel like kicking this one to the curb.

Okay these are gorgeous cookies. I just want to reach in and snag a dozen or two. I love your cooking time explanation. Cracked me right up. I swear everyone who turns on an oven should be required to read Dorie Greenspan’s article on preheating and oven temps. Would clear up so much confusion.

I just read her article and it was sure interesting. Not that I have any trouble leaving the oven to do its thing after it has reached the temperature because I am a slow baker and am never ready anyway. I would say mine swings upward of the desired temperature and then forgets to come down again.

If you look just above the recipe, you will see it written that this is not a low Fodmap recipe. It stems from many years ago before I discovered the low Fodmap diet. It would be best to avoid this recipe and check out others here: https://www.strandsofmylife.com/low-fodmap-recipes/
