My family miss all the baking I used to do, so I am always looking out for healthy sweet treat ideas. Usually, I invent them but I will also use another person’s recipes if I think they look like they could work. This one came from Kate Scarlata’s blog Well Balanced, but I added 1/2 cup of shredded coconut and 1/2 cup of chopped walnuts, and I am sure you could come up with other additions. I topped some with raspberries and walnuts while in others, I dug a little hole in the top and filled with blueberry jam. They are a really good idea with only a minimum of sugar and lots of healthy goodness. Once the family have finished eating what they can get into their tummy’s today, I will freeze the rest. They will be great as a snack or a quick breakfast if I need to get out the door fast.

I hope you’re having a wonderful time in Tuscany. You certainly will need a few lay-days after that 30-hour flight. I think the coconut and walnuts are a good addition to these cupcakes xx

Not quite there yet but leaving in a few hours. Not sure about the 40 degree heat. But I am sure about the Tuscan villa and the swimming pool.
