I saw an Italian lady make this dish on TV the other day. It looked quite stunning, and she made it look simple and quick. You would think that I had learned by now that cooking programs are very deceptive because of all the off-camera help the front person has. This would be suitable to make for guests but perhaps not for the family since it took ages to make. Thank goodness I started early because I was wanting to take photographs. I can say that it was worth it in the end but I can never reconcile taking several hours to make a meal to have it all demolished in 10 minutes. But maybe you are quicker at cooking than me.
I served it with a homemade tomato, caper and basil sauce.
- 1 cup gluten-free flour
- 1 cup water
- 1 egg
- Basil chopped up
- Grated rind of one lemon
- 3 small chillies, chopped finely
- 3 zucchini
- 1 red bell pepper
- 6 slices of cooked bacon
- 1 cup of grated cheese
- ½ cup grated Parmesan
- Grated Parmesan
- Mix the pancake ingredients together and cook 6 thin pancakes in a frying pan.
- Spread out a tea towel and place 3 of the pancakes overlappiing on it.
- Place the other 3 underneath overlapping as well. (all 6 pancakes are overlapping).
- Scatter over the grated lemon, basil and chillies.
- Cut up the bacon and place on top.
- Grill the bell pepper and zucchini until soft. Remove the skin of the bell pepper.
- Chop up both of them and scatter over the bacon.
- Distribute the grated cheese on top.
- Using the tea towel as a guide, roll up the pancakes quite tightly.
- Oil a baking dish.
- With a sharp knife, slice the roll into 3-4cm wide rounds and place in the baking dish.
- Scatter the Parmesan over the top and bake until it is hot and the cheese is melted.

It is a great looking dish. I have fallen into that trap of thinking something will take a few minutes to make and four hours later I’m nearly in tears. I’m not a fast cook at all and those Jamie Oliver cookbooks drive me to drink! If I made this for my family I’d tell them to chew slowly xx

I get kind of panicky when the recipe takes much longer than expected and that takes away the pleasure of cooking. I should automatically double the expected time but I always overestimate my speed ability.
Jamie Oliver recipes are delicious but hugely misleading with the timing.

This looks very good! Could you replace the bacon with somethin else, i don´t eat red meat ?

Yes, of course you could replace all the filling ingredients with whatever you want. I am sure you could make a great alternative filling and it would be just as good.
