I enjoy many different cuisines and Mexican is among my favourites. If you eat low Fodmap, you do have to watch out for some of their ingredients like legumes and too much dairy but it is still possible to get the richness of the Mexican food while staying true to the low Fodmap diet. It’s not hard to find gluten-free tortillas which are suitable for us these days, and cottage cheese and mature cheese are on the permitted lists as long as we don’t overindulge. This is an easy, delicious dish which wouldn’t go amiss even for guests and it seriously took me about ten minutes to put together. Oh, and it’s vegetarian.
- 8 large gluten-free tortillas
- ⅔ cup cottage cheese
- 100 gms baby spinach leaves
- ½ an avocado (only if you have no problem with sorbitol), diced
- ½ a can of corn kernels, drained
- 1 tomato, chopped small
- 1 spring onion (green part only) chopped finely
- Garlic-infused oil
- 1.5 cups grated mature cheese
- Place the cottage cheese and the spinach in a food processor and process to a paste.
- Place 4 tortillas on a baking tray and spread the mixture over the tortillas.
- Mix the next 4 ingredients, season and spoon over the spinach mixture.
- Drizzle over some garlic-infused oil.
- Place another tortilla on top of each.
- Scatter the cheese over the tortillas.
- Drizzle a little more oil over them.
- Place them in the oven under the grill until the cheese is bubbling and golden.

Hi, I thought that we could only have fresh corn (1/2 a cob or 1/4 cup), but canned corn was high fodmap?

We can have a small amount and if you divide 1/2 a can of corn into four, you would be at the right amount.
