This is a Jamie Oliver recipe which I have made low Fodmap. This was from his book, Jamie's 30-Minute Meals, so I tried to make it in 30 minutes. I got out all the ingredients and equipment, put on the oven and then started timing the making, and still it took 50 minutes. I had no issues with the process and worked as quickly as possible but I simply couldn't get it down to 30 minutes. I would love to hear from someone who has managed it. Chicken Skewers, Satay Sauce and Fiery Noodle Salad – Jaime Oliver 30-minute meals
This one of Jamie's 30-Minute Meals took almost an hour but that was the fault of our food processor which is a little too big for small amounts of ingredients like in the satay sauce for this dinner. It all stayed below the cutting blade and so didn't chop very well. I then tried the food blender which did a great job but it was almost impossible to get the thick sauce out. I guess I will need to get a smaller processor for such occasions. By the time I had photographed it, the meal was cold but the verdict was still good from the family. I also forgot to turn off the overhead lights so the photos are not great. This is not a low Fodmap recipe. Broccoli Orecchiette and Courgette & Feta Salad – A Jaime Oliver 30-Minute meal
This one of Jamie's 30-Minute Meals took about 40 minutes but again I didn't make one of the components because it seemed an over-kill.He added a prosciutto and melon salad but I felt the pasta dish and the courgette salad were plenty and they were. In fact, for once we had leftovers, which is almost unheard of in our family. The original courgette salad had bocconcini but Adriano couldn't find any and so I used feta. I think the feta actually worked better than the bocconcini would have because the feta supplied a stronger flavour against the mild courgettes. The salad was excellent. The pasta was also very tasty but had anchovies which I can take or leave but I used them to stay authentic to Jaime's recipe and they did add something to the flavour. But I am sure they could be left out. This is not a low Fodmap recipe. Steak Sarnie and Cheesy Mushrooms – Jaime Oliver Recipe
Recipe No. 3 and another success. This meal consisted of a steak sandwich, stuffed mushrooms, a beetroot salad and a potato dish. I felt there was no need for two carbohydrate sources so cut out the potatoes and I also didn't do the beetroot salad because I am not keen on beetroot. The other two dishes provided plenty of vegetables with the steak for protein. The two dishes I made took half an hour so I am guessing with the other two, it would be at 45 minutes plus. This recipe is not low Fodmap. Mustard Chicken & Dauphinoise
So I went and bought Jamie's 30-Minute Meals. And tonight was my first attempt to cook one of his meals in 30 minutes. As expected, he is a whizz kid and I am a slow poke. It took just under an hour and I didn't even cook the dessert. It's not that it was difficult, it just took a certain time to prepare and then for the two main dishes to cook. Anyway, you can't beat Jamie Oliver for good old-fashioned taste. This was a very good meal which I can recommend. I served it with baby spinach leaves. This is not a low Fodmap recipe. Paella – Low Fodmap and Gluten-Free
Yesterday was Adriano's birthday but he was away down the island because of a race today in soldier-training country. He had a bung leg because of a fall last week in which he split his eyebrow open and distorted his little finger. Four stitches later, he came home limping, with a sore finger and black eye. But still he went off to the race on Friday and, though he didn't do well by his standards, he was still in the first twenty out of 500 racers. Anyway, I cooked his birthday dinner tonight and, since he loves seafood, I chose to do paella - for the first time, I might add. I found Jamie Oliver's recipe online and printed it out. I then converted it to a low Fodmap version and well, it turned out great. It was a bit of work but nothing too hard and oh, so tasty.
